ERDA INSTITUTE Inc presents SEMESTER 2, 2009 Workshops & Short Courses Bushfoods & Restoration Ecology - with Peter Hardwick Aug 3-6, Mon-Thur 9-5 (24 hrs) $270/$195 A refreshing creative approach to integrating local bushfoods and native plants in productive gardens and landuse systems; ethnobotany and including local cultural and utility plants in Restoration Ecology & bush regen; ideas for native foods & spices in creative cooking, conserves & beverages; permaculture design for domestic & commercial bushfood production and design for wildlife habitat and corridors. Peter Harwick shares 30 years of working with native foods and is widely recognised as a leading authority on subtropical bushfoods of Northern NSW and SE Qld. Fermented Foods Workshop - with Jenny CreasyTuesday August 11, 9am-12.30pm $30/$25 Fermented foods are used by most traditional cultures across the planet. They are a great way to add nutritional value to your garden harvest and extend the life of produce. In this workshop we will explore what fermented foods are and why they are such beneficial foods. In the second part of the workshop we will make a number of yummy ferments. Please bring some small clean jars. Traditional Cheesemaking - with Jenny Creasy Tuesday August 25, from 9am-5pm $55/$45 Jenny learned traditional cheesemaking on small farms in Europe in 2002.There is quite a fundamental difference between the art of cheesemaking and the industrial process of making cheese. In this workshop we will make a traditional semi hard cheese suitable for making at home, whey ricotta making and butter making. JENNY CREASY is passionate about growing her own food and preparing nutritious food. She spends many hours in her food gardens and looks forward to having her own dairy cows in the spring. "Understanding how traditional cultures used foods to maintain health inspires much of my food preparation today. I believe reviving the food arts has a important role to play in putting the culture back into agriculture." Appropriate Technology & Natural Building Aug 17-19, Mon-Wed 9-5 (18 hrs) $190/$140 This 3-day intensive workshop provides a practical introduction to range of appropriate technologies, renewable energy systems, passive solar natural housing, composting toilets and biological waste water systems.
